So, I have CKD, and have to watch what I eat. Last Sunday we went to Panda Express for lunch after church. Normally, I get “half and half ” (half fried rice and half chow mein) with two sides, but this time I only got one side and added some veggie spring rolls.

I managed to finish my spring rolls, honey-walnut shrimp, and half of my starch, but took the rest home.

The next day, I sautéed some zucchini with minced leftover salmon and minced red delicious apple drizzled with olive oil and peppered with garlic powder over a low flame. I ate the whole thing over the leftover rice which was rejuvenated by the olive oil, a little butter and a few tablespoons of water.

I’m not crazy about salmon anymore, but cut up so small, it was tasty. I’m not partial to eating a whole large apple, and my kidneys might complain also, so I minced only about a third of the fruit, and had the rest another time.

The sautee was a success
